Caramel Brandy Sauce

2 cups Chelsea Dark Cane Sugar
1 tsp vanilla essence
2 tbsp brandy
Combine all ingredients in a medium size saucepan. Stir over a low heat until the sugar has dissolved and the butter has melted.
Cool or serve hot with puddings or ice cream.
Makes 2.5 cups.
Store any unused sauce in the refrigerator for up to 10 days.
