Chocolate Chip Pikelets

1 cup milk
1 tsp vinegar (optional)
2 cups self-raising flour
6 Tbsp Chelsea White Sugar
2 eggs
2 Tbsp melted butter
1/2 cup chocolate chips
Mix milk & vinegar in a cup. Set aside to sour. If you don't use vinegar, just put milk in a cup.
Sift flour into a bowl, then stir through chocolate chips and Chelsea White Sugar. Whisk together eggs and soured (or regular) milk. Add to the flour mixture and whisk well until smooth and there are no lumps. Add melted butter, stir in.
Heat frying pan on medium with a little butter. Drop tablespoons of mixture into the frying pan. When bubbles start to show, flip over and cook other side.
Absolutely delicious, even looking professional from my untrained hands. Easy to add extras too, always tastes nice.
This is a fantastic recipe -my grandchilden love them. Love the vinegar in the milk idea and am going to do this whenever I have milk in my baking.
Me, my dad and my younger cousin just made these. At first they cooked unevenly but after dad cleaned the oven element they cooked perfectly. Taste amazing. 5 out of 5 stars!
I think this pikelet recipe is reaaaally yum. Its not that sweet but i like it and the texture is on point.
