Ingredients

    grated rind and juice of 3 lemons
    2 slices of lemon, plus extra to garnish
    75 ml sugar syrup
    soda water and ice to top up

Method

    Place juice, rind and lemon slices in a jug. Add sugar syrup and dilute with ice and soda to taste. Garnish with lemon slices.

    Sugar Syrup
    Mix twice the quantity of sugar to water in a small saucepan e.g. two cups of sugar to one cup of water. Heat gently, stirring to dissolve the sugar, then bring to the boil and simmer until you have a syrupy consistency. Cool and store covered in the fridge.
