    2 cup flour
    2 tsp baking powder
    Pinch salt
    2 eggs
    125gm butter
    3/4 cup Chelsea Caster Sugar
    1 tsp vanilla
    1/2 cup milk
    Chelsea Berry Flavoured Icing


    Sift dry ingredients. Cream butter, Chelsea Caster Sugar and vanilla together. Beat in eggs. Fold in flour and milk until combined. Bake in loaf tin for 20-25 minutes at 180 degrees celsius.
    When cool, cut into squares. Dip in icing made with Chelsea Berry Flavoured Icing, and roll in coconut.

nice and easy how i like them.

dense textured cake, not at all like a true lamington and icing did not adhere well to the cut cake.
