Ingredients

    3 ripe banana
    3/4 cup Chelsea White Sugar
    2 eggs or 1/2 cup oil (canola)
    1 1/2 cups flour
    (add 3 teaspoon baking powder if using plain flour)
    1 teaspoon salt
    1 teaspoon baking soda
    1/2 cup sultanas or nuts (optional)

Method

    Preheat oven to 160C.  Mash bananas, add Chelsea White Sugar and eggs.
    Sift the flour, salt and baking soda together into the wet mixture. mix well.
    Mix others in if desired.
    Bake at 160C for about one hour or until cooked.

Great recipe but is it 160ªC or 160ªF ? Also is this for a fan or a conventional standard oven please?

Delicious! Fail proof.. my go to cake recipe and so easy to make vegan (using the oil instead of egg) or change the flavour by using different fruits and vegetables (mashed carrots, pumpkin, peaches, kiwifruit etc)

Very simple to make and a really lovely cake too - fat free and amazing.

Best ever recipe, easy to make. Grandchildren love it. Sometimes add choc chips or frozen raspberries.
