3 eggs
2 extra egg whites
1 cup Chelsea White Sugar
2 Tbsp grated orange rind
2 Tbsp orange juice
1/2 cup sour cream
1 cup polenta
2 tsp gluten free baking powder
Preheat oven to 180°C. Line a 20 cm round spring-form cake tin with non-stick baking paper and spray with non-stick baking spray.
Beat the eggs, egg whites and Chelsea White Sugar together. Add the orange rind, juice and sour cream. Mix well then fold in the polenta and baking powder. Pour into the prepared tin and bake for 35 - 40 mins. Serve warm with softly whipped cream and fresh orange slices.
