Ingredients

    6 lemons, preferably Villa Franca or Lisbon
    1 litre vodka
    2 cups Chelsea Caster Sugar
    700 ml boiling water

Method

    Finely grate the rind of the lemons. Place in a jar and pour over the vodka. Cover and leave a week.

    Stir caster sugar into the boiling water. Add the vodka and lemon, cover and leave another week.

    Strain into decorative bottles, adding a few fresh strips of lemon peel to each.

NO! do not any water. Lemon zest as above. Myers Lemons are very good too. 1 litre of Absolute Vodka. Combine the two for 2 to 3 weeks in an air tight jar. Strain / filter into a clean jug. Add 3/4 cup of Chelsea Caster Sugar or 1 cup if you like it sweeter. Stir until dissolved then bottle. Makes 1200 - 1250 ml. And Alcohol content reduction is minimised without the water. It will never last 2 months in the fridge.... :) It is a beaut summer drink over crushed ice.

Generally vodka doesn't work. The limoncello comes out more of a soft drink than a liqueur. Also, the lemon zest in alcohol should probably be more than a week (generally until the zest loses its yellow colour). Always be careful about the sugar. Start with less. More can be added later.

Just a question. How long can you keep it in the fridge
Chelsea Sugar:
If you store it in airtight bottles in the refrigerator it can keep for 2 months.
