Microwave Spicy Apple Cake

1 cup Chelsea Raw Sugar or Chelsea LoGiCane™ Low GI Sugar
2 eggs
½ cup oil
1 tsp vanilla essence
2 apples cored and grated, or finely chopped
2 cups flour
1 tsp baking powder
1 tsp baking soda
2 tsp mixed spice
Icing
50g butter
grated rind and juice of 1 lemon
1 cup Chelsea Icing Sugar
Beat together the raw sugar and eggs in a food processor or large bowl. Add the oil and vanilla essence. Add grated apple, flour, baking powder, baking soda and mixed spice. Spoon into a non-stick sprayed and paper-lined 5 cup (1 litre) microwave-proof, ring mould. Cook on medium-high power for 8 to 10 mins. Cool on a wire rack and serve with lemon icing or a dusting of icing sugar.
Icing
Melt the butter and add the lemon juice, grated rind and icing sugar. Mix until smooth, adding a little extra icing sugar until you have a creamy spreading consistency. Spread over the cake when it is cool.
I would use a bigger ring mould. Mine overflowed even though I poured 1 litre of water in the mould before starting just to check. I would also add more spice. Otherwise worked well and would make again with my tweaks.

I must have done something very wrong because it came out dry. I did use gluten free flour though. It tasted fine when topped with cream cheese and passionfruit butter.
