2 cups crunchy peanut butter
2 cups Chelsea Caster Sugar
2 eggs
1/2 tsp Vanilla essence
Preheat oven to 170°C. Cover an oven tray with baking paper or spray with non stick baking spray.
Mix all ingredients until well combined. Place teaspoonfuls of mixture on the prepared tray, leaving room for spreading. Using a wet fork, flatten the balls of mixture. Bake for 16 – 20 minutes until golden brown. Carefully lift the biscuits off to cool completely on a wire rack. Store in an airtight container when cold.
Nice, crunchy biscuits, a good gluten free option. You do need to like the flavour of peanut butter. Chocolate chips would be a nice addition, or melted chocolate on top.
