1/2 cup sugar syrup (see recipe below using Chelsea White Sugar)
4 cups seeded watermelon chunks
1/2 cup fresh lime juice
1 cup ice cubes
Place all ingredients except garnish in a blender or shaker and mix. Blend until the mixture is smooth and the ice broken up. Pour into glasses and garnish with lime wedges and watermelon.
Sugar Syrup
Mix twice the quantity of sugar to water in a small saucepan e.g. two cups of sugar to one cup of water. Heat gently, stirring to dissolve the sugar, then bring to the boil and simmer until you have a syrupy consistency. Cool and store covered in the fridge.
