Ingredients

    125g butter
    1 cup Chelsea White Sugar
    1 egg
    1 cup flour
    1/2 tsp baking powder
    1/2 cup coconut
    1 cup crushed Weetbix

Method

    Grease a tin. Cream butter and Chelsea White Sugar, add egg and beat thoroughly. Add flour and baking powder.

    Add crushed weetbix and coconut, mix well. Press into tin and bake at 180°C for 25-30 minutes.
