Ingredients

1/2 cup dried apricots, roughly chopped
    1 can condensed milk
    2 Tbsp Chelsea Golden Syrup
    75g butter, softened
    1 packet malt biscuits
    1/2 cup dessicated coconut

Method

This is a very EASY recipe which doesn't need the oven, it just needs the ol' fridge to refrigerate. It is important to refrigerate the balls for 20-30 minutes as it does have an effect.

First get out a saucepan and turn on the stove top to just under medium. Set out a food processor.

Put butter, golden syrup and can of condensed milk in saucepan and reduce the heat to low so it can melt slowly.

Place malt biscuits in food processor and process until fine crumbs are formed.

With a spoon, slowly stir the butter, golden syrup and can of condensed milk until melted. Add the processed malt biscuits and apricots to the saucepan and mix together well.

Roll into small balls and roll in coconut. Lastly, refrigerate for for 20 - 30 minutes until set, then serve!

    This mixture makes 20-25 balls.

Yummy but too sloppy to roll in balls so I added chopped nuts and cornflakes as didn't have anymore biscuits or coconut

I made a lot of adjustments. Used wine biscuits rather than malt, added a splash of brandy, and you must let the mix set in the fridge before rolling.

These apricot balls are a real hit with my family and I am making my 3rd lot since Xmas. Very easy and the I think the recipe is perfect, although I added more apricots. The malt biscuits were a 250gram pack and the mix was not sloppy. Thank you Flyer for a great recipe.

It was fun to make i make one mixture and it was way to sloppy so i did another one and added coconut into my mixture and it was better i recommend adding more biscuits or coconut in the mixture!.

This recipe is too sloppy and hard to manage without adjustment (I added extra biscuits) and even then I was still unable to roll into balls without them melting down out of shape.. use half the condensed milk I would say..

Greif, some of these comments below me, makes me wonder how often these people bake?? If the mixture is too wet you can adjust it accordingly!!! If you haven't got any more malt biscuits, any biscuit really would do to add to the mix!! Or place the mixture into the fridge to let it set for a wee while, before rolling..
These apricot balls are so yummy. My husband loves them, he is, as fussy as. My family and friends also enjoy them, if there's enough left for them to try when visiting!! I make them every second week. GREAT RECIPE!!! Many thanks

More like Lolly cake than apricot balls - in both taste & texture. Mix too sloppy to set into balls so misleading Recipe :( Won’t be making again unless we want to make lolly cake.

Make it half a can of condensed milk and 50 g of butter and it will work out perfectly. But if that doesn’t work I recommend more dried apricots or malt biscuits.

The ingredients were all out of proportion. The mixture was way to sloppy. I had to add a whole 250 fm apricot and another half a packet of biscuits to make it easier to roll. The first balls just flattened out. Won't be using this again.

Yes I agree, I wish I'd read the reviews too! Far too sloppy to even contemplate rolling, not sure what I'm going to do with this mess...

What a pity I did not read the reviews!
Far too wet to roll and I had to turn into a slice thingy
In future I will stick to making Chelsea Sugar tested recipes.
Have a very peaceful & safe Christmas all of you at Chelsea Sugar, from Gail in Far North Qsld, Australia.

A whole tin of condensed milk!!!! A bit much sugar content I fear!
