Ingredients

    1 1/2 cups diced red and yellow capsicum (about 2 capsicums)
    1 red chilli, finely chopped (if seeds are left in, the jam will be hotter)
    1 apple peeled, cored and finely diced
    1 cup white or cider vinegar
    1/2 cup water
    2 cups Chelsea Jam Setting Sugar

Method

    Put all ingredients except the Chelsea Jam Setting Sugar into a saucepan and simmer for 10 minutes.
    Add sugar, stir until dissolves then boil rapidly for 4 minutes. Remove from heat, test for 'set' by putting a small amount on a cold plate (the surface of the jam should wrinkle when a spoon is pushed through it). Spoon into hot, sterilised glass jars and seal.
    Makes 1 medium jar.

Was very runny - had to thicken it with cornflour and water. Tasted good though. Tart enough but sweet enough.

I love this recipe. I've made it a few times now and it is so good. My tip is to not rely on 4 minutes being long enough. Follow the cold plate trick and keep it at a rapid boil until it gets to the right consistency. Regular white sugar works too, as long as you boil it for long enough.

It's lovely, but in the years I have been making this it has always ended up looking like the Sweet Pepper Relish photo, and is very runny.

Super recipe, I added 1/2 teaspoon of salt, grated the apple and stick blended the capsicums.

is really great, On cold meat or sanwiches, if you have left over stew, just a some to your own taste, gives new meal.
