Ingredients

    125g butter, at room temperture
    1/4 cup (30g) Chelsea Icing Sugar
    3/4 cup (110g) flour
    1/4 cup (30g) cornflour

    Citrus Icing
    3 Tbsp butter, at room temperture
    2/3 cup (85g) Chelsea Icing Sugar
    2 tsp finely grated lemon or orange zest
    1 Tbsp lemon or orange juice

Method

    Pre-heat oven to 160°C and line two baking trays with baking paper.
    Using an electric beater, beat butter and icing sugar until creamy and pale. Sift flour and cornflour over mixture and mix together well.
    With lightly floured hands roll mixture into teaspoon size balls, place on baking trays and press lightly with a fork that has been dipped in icing sugar.
    Bake for 15 minutes or until cooked through, remove from oven and place on cooling rack.

    To make icing, beat butter, icing sugar, lemon or orange zest and juice until smooth.
    When biscuits are cold, spread the icing over half one biscuit and top with another biscuit, store in an air tight container.

Terrible recipie, hardly makes any, and what you do manage to get from it is extremely crumbly.

Great recipe. It worked well for me. I liked the level of sweetness (not too sweet but sweet enough).
I replaced zest with finely chopped candied lemon peel and it worked a treat.

Lovely biscuits, with a lovely melt-in-your-mouth texture. Although I liked them, when I made my icing it curdled, which was a bit of a disappointment as I spent a lot of money on buying the lemon.
