Ingredients

    Topping
    3 Tbsp flaked almonds (optional)
    2 Tbsp Chelsea Demerara Sugar
    1 1/2 tsp ground cinnamon

    Muffins
    2 cups Edmonds Standard Grade Flour (300g)
    4 tsp Edmonds Baking Powder
    1 tsp ground cinnamon
    1/2 cup Chelsea White Sugar (113g)
    2 eggs
    1 cup Meadow Fresh Original Milk (250ml)
    100g Tararua Butter, melted
    2 cups roughly diced apple (skin can be left on if desired) (approx. 225g / 2 apples)

Method

    Preheat oven to 200°C bake / 180°C fan bake. Line a 12-hole muffin tin with paper cases or grease well.

    Topping
    Mix the almonds (if using), Chelsea Demerara Sugar and cinnamon together and set aside.

    Muffins
    Sift the flour, baking powder and cinnamon into a large mixing bowl. Stir in the Chelsea White Sugar.

    In a separate bowl, whisk the eggs and milk together. Pour into the dry ingredients together with the melted butter and diced apples. Gently stir with a spoon until just combined. The mixture should look a little lumpy.

    Spoon into muffin tin holes. Sprinkle muffins with the cinnamon sugar topping.

    Bake for 15 – 20 minutes, until muffins are golden and spring back when lightly pressed (or a skewer inserted into the centre comes out clean). Leave to cool in the tin for 5 minutes, before turning out onto a wire cooling rack.

Yum! Super easy to make and is an easy recipe to halve. Not too sweet and is moist. I topped with chopped walnuts and raw sugar instead of the cinnamon sugar.

I use this recipe often. I’ve found that they vary each time in consistency - must just be me! I use 2 large apples and when measured following this recipe exactly, I’m always able to fill one tray of small dozen muffins and one tray of six large muffins. So it’s really a very decent amount - doubled is too many! They’re actually pretty healthy too, as far as baking goes :)

I’ve been using this recipe for a few years now and it’s been great so far. Very easy prep and tasty outcome! I find that as long as you chop the apples into lil cubes (which I prefer) that the recipe produces 12 small muffins and 6 large. It’s plenty but I’ve also doubled this and frozen for later. The rule for muffins is not to over mix and to get them into the oven as quick as possible (cakes are the exact opposite) but the apple stops them from drying out also. Happy days

Made them in big texas muffin tin so only made six Instead of white sugar and cinnamon as the topping did brown sugar and cinnamon Moist and easy to make

Really easy to make and tasty. Great way to use up apples that are go9ng soft and the kids won’t eat them. I just used any type of apple left in the fruit bowl. Nice having chunks of apple through it!

Yummy muffins! Used our own sweet apples from our orchard. I doubled this recipe and used four medium sized apples. I read the reviews before baking and decided the apples also which came out well. Thanks

Easy apple n Cinnamon muffins

Great recipe, but way too much baking powder! Makes the result taste a little soapy, so I would use 2.5tsp next time. Otherwise a very simple and great tasting recipe and I will definitely make these again!

Love these cinnamon and apple muffins as they don't go dry at all its the best recipe and so easy. We add an extra teaspoon of cinnamon as its popular at our house.

Lovely recipe. My son really enjoyed it. I found having the apple diced tasted great. Next time ill try to grate the apple- as i have read on other reviews.

Really easy recipe and taste really good with a simple vanilla icing sugar glaze. I substituted 4 tsp of white sugar for brown sugar
