Spread butter on bread slices. Slice bananas into long, thin strips and make into banana sandwiches, sprinkling with a little Chelsea White Sugar and securely pressing together. Beat eggs and milk together. Add cinnamon and pour into a shallow plate. Soak the banana sandwiches in the mixture.
In a fry pan heat oil and butter together and when sizzling, add sandwiches. Cook until crispy and browned. Drain on paper towels and keep warm in the oven until the whole batch is cooked.
Cut each sandwich in half and serve with Chelsea Maple Flavoured Syrup or Chelsea Golden Syrup and fresh fruit.
Dust with Chelsea Icing Sugar if desired.
