Moist Fruit Cake – Egg Free

125g butter
1 1/2 cups Chelsea White Sugar
2 cups milk
400-500g dried fruit mix
1 1/2 cups self-raising flour
1 1/2 cups wheaten cornflour
1 tsp cinnamon
1 tsp baking soda
1 tsp mixed spice
1 tsp salt
Boil butter, Sugar, milk and fruit in a saucepan for 5 mins. When cool, mix in rest of ingredients. Pour into well-greased or baking-paper lined 23cm cake tin. Bake for 1 3/4 - 2 hours at 160°C.
I am a useless baker but this eggless fruit cake was a hit with my husband who is a fruit cake connoisseur. I actually don't like fruit cake but I halved the sugar content and it was still very sweet and I actually really enjoyed eating it, My husband was surprised at how much he liked the cake despite the reduction in the sugar as he likes really sweet cakes.
I soaked the fruit in rum for about 1 week and this might have given the cake some depth in taste.
I've done this cake before and was amazing. Planning to do it as Christmas cake, adding some Rum or Whiskey. Does anyone know how long will it keep?
I tried this recipe and even though it was my first time of baking a fruit cake,it turned out to be really great.It was everything I had hoped it would be. I only have to reduce the sugar slightly next time though, because it was a little bit too sweet for me, but the kids don't agree.They think that the cake is just perfect as it is Thanks a lot for this easy to follow eggless recipe. I can actually enjoy fruit cake again, even though I don't eat eggs.
