Ingredients

    2 cups Edmonds Standard Grade Flour (300g)
    3/4 cup Chelsea Caster Sugar (170g)
    4 tsp Edmonds Baking Powder
    pinch salt
    1 cup Meadow Fresh Original Milk (250ml)
    100g Tararua Butter, melted
    2 eggs
    1/2 tsp vanilla essence
    1/2 cup chocolate chips (100g)

Method

    Preheat oven to 220°C bake. Line a 12-hole muffin tin with paper cases.

    In a large bowl, stir flour, Chelsea Caster Sugar, baking powder and salt together.

    In a separate bowl, whisk milk, butter, eggs and vanilla until combined. Fold into flour mixture together with the chocolate chips. Don't over mix or muffins will be tough.

    Spoon into prepared tin. Bake for 12-15 minutes, until muffins spring back when lightly pressed on top, and a skewer inserted into the centre comes out clean. 

    Delicious served warm!

Great easy recipe, just be mindful when mixing the milk and butter as I accidentally poured the milk into the butter which resulted in curdled milk/ butter.

i think there is no better choc chip muffin ricipe then this!

Muffins looked great and yummy but all I could taste was the baking powder...4tsp of BP seemed a bit extreme. Was this a typo in the recipe??

I melted the butter but once I added the milk it solidified the butter again. I had already added the eggs so I had to put the whole lot in the microwave to re-melt the butter. The muffins came out very pale and rubbery. Pretty disappointed but will try again with room temp milk

there amazing i had no vanilla essence so i put a teaspoon of cocoa powder
and i had no bakeing powder so i put one teaspoon on bakeing soda in instead of bakeing powder and they turned out amazing and fluffy

Nice and fluffy I make normal ones and mini ones for the kids lunches .

If you want to stop chocolate chips from sinking to the bottom of the muffin coat them in flour before you add them to the rest of the mixture

Muffins were quite dry. 220C is high to bake muffins, maybe try at a lower temperature.

I am a teacher aid and have made this recipe twice with the children. Both times everyone says it needs more sugar. Next time I’ll add more sugar or find a different recipe

super yummy - i did swap 1/4 sugar to brown sugar and 1 cup of chocolate chips instead of 1/2 and added 1/2 cup of cocoa

I give 2 & a half stars. One star for the simplicity of the receipe, other for being light and fluffy & a half star for being easy to make. Down side the chocolate chips sunk to the bottom, the receipe needs adjusting, too much baking powder leaves you with a horrid after taste. Apart from that they're ok.

It was an alright recipe, it wasn't SUPER delicious! I added some chocolate buttercream on the top, which made it taste much better. Hope this helps. :)

I only put tsp of baking powder & increased vanilla til 1sp per other's suggestions. I also realised that I didn't have cocoa powder so I melted 6squares of whittakers ginger caramel chocolate with the butter, added the milk & egg to that bowl and then mixed it through. I left it some what white (dry floury) in places and when cooked it is delicious & marbled on top. Quick, easy, nom nom

STOP! Don’t try this recipe it’s terrible, I hate it when I waste all the ingredients on a bad recipe. Followed to a T and was quite funny all the choc chips sunk and they didn’t rise even though there was 4 tsp of baking powder in it.

Made these 3x now and I reduced the baking powder to 2tsps and used normal sugar which worked fine, added a little more choc chips and baked at 170 degrees for 15 minutes after pre heating oven while mixing all the ingredients in one bowl using a sift for the dry ingredients and these are delicious, as long as you use 2tsps of baking powder and mix with flour well before you pour in wet ingredients, you will have well blended delicious tasting muffins.

Yes, please mix all the ingredients together in a large bowl until just mixed. Don't over mix or muffins will be tough.

Temperature is far too high. Burned on the outside after 10 mins and uncooked on the inside!

These are very easy and quick to make. The recipe is easy to follow and it uses simple enough ingredients. I’m twelve and bake these a lot for my family and they are really great and easy!

Well my workmate baked the chocolate muffins for us and brought them in for smoko as we all enjoy baking....these were soooo dry we had to wash down with our coffee. The amount of baking powder is far to much we would use 2 tsp baking powder to 2 cups of flour not 4tsp. It was a laugh and we still laugh about her first baking experience and tell her she needs to try again.

Choc chips sunk to bottom and temp a bit high.
I scattered the choc chips at the end instead of mixing it and they didn't sink.
Overall I quite liked it tbh.

Easy to make, it was very quick to make also. The results were very tasty everyone loved them but the mix was a little bit stringy and sticky so that made it hard to put in the molds.

Not bad at all! Very easy, I did what someone else suggested 3tsp BP and 1 cup sugar. Rose up nicely, they did stick to the cupcake papers though, (my pet hate). However tasty and easy to make.

I love this recipe so much, I am 13 yrs old and bake these for my family and for me and my brothers lunches. The outcome of this recipe is very light, fluffy, melts in the mouth and is very filling. This is definitely something I would recommend to others! DELICIOUS!!!!!!!!!!!!!

I've now tried to make this recipe 3 times for my daughters birthday, every time I got complaints about a bitter aftertaste. I thought "I" had made the mistake but after a bit of research (a lot of needless waste and time) it turns out a pro baker says you should only ever use 1 tsp of baking powder to each cup of flour as a rule. So this recipe should say 2tsp of baking powder not 4.

I used 3tsp baking powder, 1 tsp vanilla and 50/50 wholemeal - plain flour and cooked the muffins at 180 for 17 mins..light, fluffy and delicious.

This recipe is Amazing! Decided to add 3 teaspoons instead of four teaspoons of baking powder, and 1 cup of sugar and that definitely improved them. I also added 1 teaspoon of vanilla instead of half a teaspoon, and they came out absolutely perfect! Crispy and golden on the outside and soft and spongey on the inside. Totally recommend this recipe, my thirteen year old could make these and she can't bake to save her life! Definitely going to make some more!!! Delicious!

I found 4 tsp of baking powder far too much so 1st batch i did not enjoy. I have just made a 2nd batch with only 1 tsp of baking powder MUCH BETTER every one really enjoyed them.

Great. Used coconut oil for butter and plain yoghurt for milk and turned out well.
