Ingredients

    2 1/2 cups self raising flour
    1/2 tsp bicarbonate of soda
    1/2 cup (60g) quick cooking oats
    1/2 cup Chelsea Soft Brown Sugar
    1/2 cup Chelsea Golden Syrup (in the tin)
    2 eggs lightly beaten
    2 small overripe bananas mashed
    1/3 cup vegetable oil
    3/4 cup buttermilk

    Topping
    1/3 cup Chelsea Easy Pour Golden Syrup, extra
    1/3 cup pistachio nuts, for garnish

Method

    Preheat oven to 180°C conventional or 160°C fan forced.

    Sift flour and bicarbonate of soda into a bowl, stir in the oats and Chelsea Soft Brown Sugar. Combine Chelsea Golden Syrup, eggs, banana, oil and buttermilk and stir into the dry ingredients until just combined. Do not over mix.

    Spoon the muffin mixture into greased and base lined (1/3 cup) muffin pans. Bake for 15-20 minutes or until cooked and golden.

    Enjoy warm, drizzled with extra Chelsea Golden Syrup and sprinkled with pistachio nuts.

These muffins were so dry

Made these dairy free with coconut cream which I curdled to get the buttermilk. So easy - everything in one bowl & hardly any washing up. Added cranberries & a little cinnamon & nutmeg. Put 85g in each cupcake case & they rose beautifully. Made 17 & needed 20-25 mins. Perfect. A new breakfast muffin for us when on the go.

Made these with gluten free flour as I can't eat wheat, they were beautiful. Nice and light not to sweet, I also put in walnuts yum. My whole family loved them.

How annoying is it to read a recipe that states "...1/2 a cup of quick cooking oats". I have no idea what quick cooking oats are. Is there a particular brand or type of oat? Any chance of being helpful here Chelsea?
CHELSEA: Quick cooking oats can be found in virtually all supermarkets around NZ. They are usually labelled 'quick oats', and available under several different brands. Rolled oats would also be a suitable replacement.

These muffins were gorgeous!!! Made them for my whole whanau it was absolutely amazing. Yummy lunchbox snack for the kids.

I replace the topping with Demerara sugar sprinkled over the top before baking. Lovely!
