Ingredients

    4 eggs
    1 1/2 cups Chelsea White Sugar
    100g butter, cut into little pieces
    grated rind and juice of 2 lemons

Method

    Place the eggs and Chelsea Sugar in a large microwave proof bowl or jug. Whisk with a wire whisk, until well combined. Add the butter, lemon juice and rind. Microwave on high for 8- 10 minutes, stirring every minute, until the mixture is smooth, thick and creamy.
    Cool for 5 minutes then pour into warm clean jars. Seal when cold and store in the fridge. Keeps for up to 2 months.
    Perfect on toast, ice cream or serve with lemon cakes or in tarts.

    Tip: To make passionfruit honey, replace the lemon measure above with 1/4 cup passionfruit pulp and the grated rind and juice of 1 lemon. Follow the same instructions.

    Serves 2 cups.

I followed the recipe and directions exactly and it curdled. Why is this?


 


CHELSEA: This may be due to the wattage of your microwave. the higher the wattage, the faster it will cook. If you think you're microwaves wattage is very high, you could consider cooking on a medium setting which will slow down the cooking process.

Have made this recipe in bulk for a church fair 3 years in a row Never failed.

Make this all the time, so easy and delicious

Love this recipe. I cut the sugar down by 1/4 cup and double the citrus. Have made it using grapefruit…yummm and also limes…yum… have shared this recipe so many times.

Make this delicious spread as gifts and supply recipe as well. A keeper

I use the steps for lemon curd in my thermomix but use these ingredients. It comes out beautifully, just like I remember my grandmother made. Thanks Chelsea for giving me that link to my past

My Lemon Honey looks curdled & grainy
not smooth.
Stirred the mixture every minute for 8 mins on high in the Microwave
Where have I gone wrong
Have more Lemons for another try

There's no honey in it. That's Lemon Curd not Lemon Honey

To my shame, living on small plot with lemon trees finally got round to making. So pleased with it. Doesn't make huge amount but im new to this. I decreased the sugar and increased lemon juice cos I likka the tart.... will be a keeper thank you

This recipe has become a family favourite and I have people asking me to make it for them, all the time now. Love it.

Great easy recipe, less cleanup from the old ways, to the ones that keep saying don't call it honey, this is a very very old name, and obviously the honey part of the name is named for the lovely consistency rather than it meaning honey.

So easy to make and enjoyed by the family.

For those that don't like being called honey, perhaps lemon spread will suffice.

Really easy recipe and tastes delicious. I cooked for the full 10 mins and the result is lovely and thick. 8 mins would have been fine and would result in a slightly runnier version. Remember it keeps thickening up a little while cooling in the jar.

Great microwave recipe but why call it lemon HONEY? I thought it had honey in it......

For People complaining about the name and it not being honey it’s actually years & years old so don’t blame Chelsea blame your Nana’s or even Nana’s Nana !!

Omg this microwave version is a revelation. I've been making it in a double boiler for years. You've just saved me so much time and clean up! Recipe is delicious. I add lime sometimes too if I have them on the tree.

Kids have gone now I'm making lemon honey.....

But looks and tastes great easy to make.

So quick and easy. Love this recipe I doubled the recipe and put in 1/2 a cup less sugar.

Outstanding results and I doubled the recipe.
I have always whisked for hours on the stove but I will only ever use this microwave recipe again.
I added equal quantities of cream cheese to lemon curd and pour into a blind baked pastry shell and bake until set, to make a divine light cheesecake.

I just love making this recipe. If I make it for my sister or brother (dairy and gluten free) I replace the butter with coconut butter comes out the same

well I tried to do as the recipe said, but it boiled and has come out sort of curdled not what I wanted!!!!

I use 4 lemons and no zest. Have made it regularly over the years. It's a real favourite.
