Ingredients

    200g butter
    200g dark chocolate 
    1/4 cup rum (or 2 tsp rum essence)
    2 cups Chelsea Icing Sugar
    1 cup raisins or sultanas, finely chopped
    1 cup desiccated coconut

     

     

Method

    Melt the butter and chocolate together, either in the microwave or over a saucepan of gently simmering water. Add the rum, Chelsea Icing Sugar and raisins or sultanas, mixing until smooth and well combined.

    Chill the mixture until you can shape it into small balls (approximately the size of a large marble).  Roll the balls in coconut and store in the fridge.  These keep well for a few weeks in the fridge or longer frozen.

Just made a double load with raisins soaked in rum for 3 weeks. Added 1/2c dutch cocoa to thicken up the mix a little. The mix was easy to work with once it had sat in the fridge until really firm. I coated some in 90% chocolate. How decadent can you get!

Made these on the weekend - epic failure, so runny and never got to the stage of being able to form even after leaving all night. I’m a good sweets cook and there’s something not right about this recipe. Waste of expensive ingredients not to say I then had to go buy something to take to my event which I was not happy about

Too sweet! They were just like eating icing sugar and I was so worried about my family's teeth. I threw much of the recipe in the compost.
