Ingredients

    2 cups ground almonds
    1 cup Chelsea Caster Sugar
    finely grated rind of one orange
    2 egg whites, beaten to soft peaks
    1 heaped Tbsp honey, warmed
    Chelsea Icing Sugar to dust

Method

    Preheat oven to 160°C. Line 2 baking trays with baking paper. Dust this with Icing Sugar. Mix all ingredients to a thick paste. Sieve a layer of Icing Sugar onto the work surface and roll small balls of the mixture in the Icing Sugar to coat well. Press down on the trays leaving plenty of room to spread. (Biscuits just need to be pressed down slightly not flattened out with a fork as you do with other biscuits). Bake for 15 — 18 minutes then cool on a wire rack — store in an airtight container.

Tasty and a great gluten free biscuit

Looks simple to make and tasty. Presume this temp is not a fan forced oven..

Amazing tasting. I'm not gluten free, and I normally hate gluten free food, but this is an exception. The only thing I would critique is that it's a bit too sweet.

One up was too much sugar. Quarter cup and honey was suffice.

These were delicious and easy to make. I am only 6 years old and I could make them easily with my Aunty's help. We only used 1/2 a cup of sugar and this was plenty! We will make these again!

Absolutely utterly delicious recipe.

Recipe notes:
I made 2.5 times the recipe and only got 30 biscuits, despite only making each biscuit with a large teaspoon. I found they needed to be flattened more than I thought at first - pressed down into a thick biscuit shape rather than giving them just a light press. My first few still look very thick and didn't spread much. :) I might have gotten up to 40 biscuits if I had flattened them down that much to begin with.

I used 3T of aquafaba in place of each egg white, which I think worked well. I reduced the sugar as recommended by other commenters and found them perfectly sweet enough even at 3/4c. This could possibly be reduced slightly. Making 2.5 times the recipe meant i used the rind of 2.5 oranges - - the biscuits are at the perfect amount of orange flavour for me at that amount.

Definitely agree with doing 3/4 cup sugar instead of 1 cup. Really really sweet with 1 cup caster sugar plus the icing sugar - kinda takes away the zingy citrus flavour you want from the orange. Otherwise delicious!

Super yummy and well worth a whirl... I came across these at family members place and couldn’t believe such yummy biscuits could be gluten free... now a firm family favourite!

I made 2 batches today. Definitely only need 3/4 cup sugar as they are pretty sweet. Love the orangey flavour and oh so chewy! Perfect for a gluten free sweet treat. Very easy recipe.

Can I use mandarin or lemon. Which one is better?

Exceeded expectations. So easy and so yummy. I knocked the sugar back to 3/4 cup as suggested by others, and as my orange tree is not fruiting, but my lemon tree is loaded, I swapped the orange rind for lemon rind and it was delicious (it's a Meyer lemon, which isn't as sour as other varieties).

Very easy and everyone loved them. I added a tablespoon of orange flower water to boost orange flavour, which worked well.

Love these biscuits and so does my whole family. I make these at least once a month. I add less sugar though as they are quite nice with just 3/4 of a cup.

Delicious! I didn't have an orange so substituted a lemon. I also halved the amount of sugar, and it was more than enough.

Quick, easy and delicious

Gorgeous flavour, rolling in icing sugar gives a shiny crackly crust with a bit of crunch. Mine came out a little undercooked in the centre, I'll flatten them more next time. A great recipe for a wheat free, dairy free diet.

I have made these biscuits so many times now and they are always a hit with everyone. I couldn't count how many times I have given the recipe out. They are not just for gluten intolerant! Everybody loves them.

This is a great recipe, nice fresh flavour.

I have made these biscuits, i dunked half of the biscuit into melted chocolate just to top it off, not bad.
