Ingredients

    1 cup Edmonds Standard Grade Flour
    ¾ cup Chelsea Raw Sugar or Chelsea Organic Raw Sugar
    1 cup rolled oats
    ½ cup diced dried apricots
    ½ cup dark chocolate bits
    ¼ cup shredded dried coconut
    3 Tbsp Chelsea Golden Syrup Tin
    120g melted Tararua Butter
    1 tsp Edmonds Baking Soda

Method

    Preheat oven to 190°C conventional or 170°C fan bake.
    Place all ingredients into a mixing bowl, mix till combined.
    Place 1 tablespoon of mixture onto the greased baking sheet, press down with fork.
    Bake for 12 minutes.

Tips

    Chelsea Golden Syrup in the iconic red and gold tin is the best for baking. It has a thicker consistency and richer caramel flavour than Chelsea Easy Pour Golden Syrup (which is more suited to drizzling and marinades).

I did it without any fruit and it tasted so good.

Would have tasted great... if I didn't burn them haha. Don't really know what happened tho, 190 for 12 minutes.. burnt. Oh well

Can I make it without dried apricots?

Yes, you could swap apricots for another fruit option like raisins.

My mixture wouldn't stick together? ANZAC biscuits usually have a couple of tablespoons of water , in which the baking soda has been dissolved in then added to melted butter.
Have I missed something?

If you have melted the butter completely and dded the full amount of Chelsea Golden Syrup you should not experience this problem. You could add a small amount of warm water to assist the mixture.

Taste delicious but where did I go wrong???? Mine all crumbled to bits!.... Help!

Great recipe. I substituted the dark choc bits with white choc bits, then drizzled some dark chocolate over them while they were cooling. I will definitely make these again, and will try with cranberries like a previous reviewer.

These were a hit in our house! My father is a huge Anzac biscuit fan and loved these ones! I didn't have apricots so added chopped dates instead. They gave a lovely chewy texture, combined with burst of chocolate - yum!

These biscuits are delicious and quick and easy to make. I also sustituted some of the raw sugar for brown sugar and they are slightly chewy, my favourite. Have made them 2 days in a row as they don't last long in our house.
