Ingredients

    6 slices white sandwich bread, buttered
    2 tablespoons currants
    2 tablespoons sultanas
    2 eggs
    2 tablespoons Chelsea White Sugar
    2 cups Meadow Fresh Original Milk
    1 teaspoon vanilla essence
    1/2 teaspoon grated nutmeg
    Chelsea Icing Sugar to dust

Method

    Preheat the oven to 180ºC bake.

    Cut the crusts off the bread and cut each slice in half diagonally to make 2 triangles. Lay four bread triangles butter side down in a pie dish or small lasagne dish, approximately 20 x 20 cm. Sprinkle with half the currants and sultanas and repeat to form layers. Finish with a layer of bread with the butter side up.

    Beat the eggs and Chelsea White Sugar together, then add the Meadow Fresh Original Milk and vanilla. Pour over the bread and butter and sprinkle the top with grated nutmeg.

    Place the dish into a large roasting pan filled with water to come three-quarters of the way up the sides of the pie dish. Bake for 30 minutes until golden brown and set. Dust with Chelsea Icing Sugar to serve.

Made this Rewana Baps pulled apart and squished into my casserole dish. You definitely need the sugar sprinkle on the top for the extra crunch.

The custard was good it did take just over 50mins to set. And I used brown sugar instead of white for a more caramel taste.

Overall 4/5 with the changes I made.

This tasted like a soft, tasty cloud!

Great recipe. I spread strawberry jam on top when it came out the oven instead of sprinkling with icing sugar.

all these reviewers obviously don't know what B & B pudding is. Good recipe anyhow. I sub the dried fruit for frozen berries and dark chocolate and use croissants instead of white bread. Gourmet

The bread pudding I felt had to many areas compared to my mums recipe .
In my mum's you sprinkle the sugar onto the top of bread you add raisins .
My mum's recipe say stale bread butter and layered .
Milk is 2 cups with 2 eggs and vanilla extract .
About 1 tbspn sugar .
Beat eggs with double cream and milk .
Add nutmeg 1/4 TSP
Layer and sprinkle sugar on top bake at 180 .

A couple of things wrong with this recipe. Use 3-4 egg yolks, no egg white. More milk needed, enough to soak the bread. Suggest 12 slices of 'cheap' thin white bread, ideally a little dry. Don't over do it with the nutmeg or Grandma will be bouncing off the ceiling. Serve with custard.

Easy to make but just super meh. Basically just a wet French toast

So easy and delicious. I use the crusts from the end of the sausage sizzle loaves and omit the currants.

Made using the chocolate easter buns bought by mistake! Put locally foraged stewed peaches in between the layers. Delicious - especially with deep south ice-cream on the side....

awesome recipe. tweeked it a bit by putting chelsea golden syrup on the middle layers of bread.... divine.
