Ingredients

    1.5 cups flour
    2 Teaspoons Baking Powder
    1/2 cup of Chelsea White Sugar
    100g melted butter
    1 Dessertspoon Chelsea Golden Syrup
    1 egg
    1/2 cup milk
    1 cup Coconut
    Jam (any jam)

Method

    In a small saucepan, melt the butter and the golden syrup.
    In another bowl, sift flour, baking powder, and stir in sugar.
    Add to this bowl, the melted butter mixture and the rest of ingredients (not Jam).
    Fold mixture till just combined.
    Spoon mixture into prepared muffin trays.
    Put approx half a teaspoon of jam slightly imbedded into the centre of muffin, and sprinkle a bit of coconut over the top of the muffin.
    Bake in a moderate oven at 180 degrees centigrade for 20 minutes, or till cooked.

Loved by all and super easy

This recipe worked really well. I love the dense, cakey texture of the muffin. Coconut and jam go really well together! I made a well in the mixture and put a teaspoon of jam in the well and that worked great.

Didn't have syrup nor butter. Omitted the first and replaced the latter with a bit less than half a cup of bran oil. It worked out very well: moist and coconutty. Will be even better probably if coconut is toasted before it is added to the batter and butter is used.

So nice literally!
