Peach Muffins

1 3/4 cups flour
3/4 cup Chelsea White Sugar
1 teaspoon baking soda
2 teaspoons cinnamon
2 eggs
125g melted butter
3/4 cup milk
1 cup of chopped peaches (if using canned, make sure they are well drained)
Mix all ingredients together in order as listed until just combined.
Don't overmix or the muffins will be dense and tough.
Put into muffin paper cases lining muffin tins or well greased or oil sprayed muffns tins.
Bake at 180°C for 15-20 minutes.
These turned out great. I used gluten free flour so needed and extra 3/4 cup but you’d never know it was gluten free, maybe a bit lighter and less dense than wheat flour. Very tasty!
Super delicious recipe, recommend using less cinnamon if it ain’t your thing but overall great. Just wondering how long they would last in the cupboard/fridge as I made them for my sons school lunches?
Delicious. Easy and quick to make. Mine only made ten so I think UK muffin cases might be a little larger than those used in recipe. I needed to cook them 22 minutes due to that. I’d intended to freeze half. No chance - they just disappeared!!
i made these for the first time. i make lots of muffins and this one was very wet. i drained the peaches very well and did exactly what it said on recipe. i made mini muffins and made 31. the first 24 overflowed even though i filled them the same as the second lot. the second time, the mixture was a bit thicker on standing and the next 7 came out perfectly. maybe it was the humidity in Auckland, i have no idea but next time i will leave the mixture to thicken a bit.
Delicious and easy to make! I blitz up canned, drained peaches for my very fussy girl, easy way to get some fruit into her :)
The last review says ‘a bit plain but good’ and I would agree with that. Also will probably reduce the cinnamon next time.
Easy perfect muffins. I added chunks of cream cheese for extra yum. on a side note - I accidentally used baking powder as well as baking soda and it wasn't noticeable in the end product.
Beautiful! I loved these. I used tinned peaches and followed the recipe exactly. Will definitely bake these again.
Just made the muffins. I used home bottled peaches which I drained well. Result was a lovely light muffin. Will use the recipe again. Only criticism is the amount of cinnamon. I will use 1 teaspoon next time but that may just be a matter of personal taste.
These are yum, not too sickly sweet either! I have saved this recipe and I will definately bake these again! - Thank you!
Loved this recipe! Quick and easy but I wonder if i could leave out the cinnamon or add less sugar? I loved the texture and everything but found it a tad too sweet? Do you reckon I could add a teaspoon of lemon juice to break the sweetness up a bit without affecting everything else?
CHELSEA: Glad to hear you enjoyed this recipe. Did you use canned peaches? To reduce the sweetness we recommend using peaches canned in juice rather than syrup. You could also try adding 1 tsp lemon zest and cutting the cinnamon back to 1 tsp.
