Ingredients

    2 cups Edmonds Self Raising Flour (300g)
    3/4 cup Chelsea Caster Sugar (170g)
    1 egg
    1 cup Meadow Fresh Original Milk (250ml)
    Finely grated zest of 1 lemon
    60g Tararua Butter, melted

    Lemon Drizzle Topping
    1/3 cup lemon juice (80ml)
    1/3 cup Chelsea Caster Sugar (75g)

Method

    Preheat oven to 180°C fan bake or 200°C regular bake. Grease a 12-hole muffin tin or line with paper cases.

    Mix flour and Chelsea Caster Sugar together in a large bowl.

    In a separate bowl, whisk egg, milk and lemon zest together. Add to dry ingredients. Add melted butter and mix until only just combined.

    Pour into prepared muffin tin and bake for 15-20 minutes.

    While muffins are cooking, make the drizzle topping by whisking the lemon juice and Chelsea Caster Sugar together until the sugar has dissolved.

    As soon as the muffins are cooked (they should spring back when lightly pressed) take out of the oven and spoon the lemon drizzle topping all over the tops. Leave the muffins to sit in the tin for approximately 3 minutes before taking out and leaving to cool on a wire rack.

I added an extra 1/3 cup of milk and table spoon of oil. As it didn’t look runny enough as some of the comments mentioned.
As well as extra lemon juice.
I added the lemon juice mixture on top of the raw batter and then cooked it to avoid the grainy sugar texture and create a syrupy cupcake.
Made 12 of them.

Came out light and fluffy, delicious

I was a little skeptical with the previous reviews but they came out delicious. Light and soft. Tasted great. & it made 12. Will definitely make again. I did use two lemon rinds rather than one.

As a first time baker, I found it a little challenging to make these, but they turned out pretty good! I read a few of the comments said that their muffins turned out really dense and doughy. I think that this is due to the fact that you should put in more milk than is mentioned in this recipe. I trusted my intuition on that, and it didn't disappoint.
Another thing: you most definitely do not get twelve muffins out of one batch. I doubled everything and got fourteen muffins; two more than you are supposed to get with the normal amount of everything.
This recipe could be brushed up on a bit, but it is not too bad. I prefer freshly squeezed lemon on my muffins (I'm in love with lemons) so if you like, you can use that instead of the drizzle.

I made a double batch and somehow only got 15 muffins? Not sure if I missed a step or did something wrong but they turned out super doughy and dense :( not great but will retry another day to see if I can perfect

I loved this recipe! I baked my muffins for 15 minutes and they were perfectly cooked. The syrup was runnier than I expected so only drizzled a little bit, but all my family were raving about these muffins!! Making another batch now hehe

This recipe failed unfortunately...waste of time and ingredients. Normally Chelsea's recipes are good, but after following the exact ingredients and measurements it formed more of a dough, then didn't even cook properly. Had to throw out. Don't know what's wrong with this recipe but it didn't make muffins

I made the muffins as per the recipe. They were in the oven for 17 mins. I poured the lemon sugar syrup over the muffins. I felt there was too much syrup. The muffins were doughy and heavy. I threw them out

This recipe is so good. My picky sister loved it so much. It was so easy

Have made it twice with 2 cups standard flour + 4 teaspoons baking powder instead of 2 cups self-raising flour. Everything is spot-on. The trickiest part is getting the syrup to soak into the muffins without it running everywhere. For this reason, keep the muffins small enough to leave a small lip at the edge of each tin hole. The syrup can sit there in the rims and soak into the muffins.

My lemon marmalade didn't set so I added some to this recipe - YUMMMMM

Hi these muffins are very good but I followed the recipe and I got 6 full sized muffins. They have a Nice lemony taste to them I find you can add other things like strawberries. It tastes quite nice.

15 mins in my FF oven. Brilliant to freeze, then microwave (if they get that far). The glaze is a great touch, too. Good way to use up excess lemons.

soo easy but would add more lemon juice for a more strong flavour and mix with a whisk because was very lumpy otherwise.

These muffins are so easy to make and taste great. I found the recipe makes 10 full sized muffins. Fan baking is best, no more than 17 mins in my oven.

They were soooo easy to make. They were delicious. I had to leave them in for 10 minutes longer than the recipe said because they were still quite yummy. I will definitely make them again because they were sooo delicious thank you sooo much.

It was very good though the mixture was a bit doughy and got stuck on the top of your mouth. Other than that they were delicious and my family loved them I am only 9 and I am very proud of myself. I am not sure If they were supposed to be doughy or not, I might make them again.

Works very well, but you definitely need to let the muffins sit for a bit once you have drizzled the lemon juice/sugar mix otherwise it is a bit sticky.

Super easy and tasty recipe. Mild enough for kids to enjoy too. I used a bit extra rind as had two smaller lemons. And used a pastry brush for the liquid drizzle as that made the least mess

Super quick and simple! I didn't have enough milk so topped it up with lemon juice. Be a great recipe for kids! Light lemon flavour with the topping more intense. Yum!

Awesome recipe! Moist and tangy and I like that they use about half the amount of butter you find in a lot of muffin recipes. Quick to make too..these will definitely be a go-to recipe for me.
