Marinated Prawn Kebabs

500g prawn cutlets
Skewers soaked in water
Olive oil, for grilling
2 Tbsp Chelsea Golden Syrup
100g butter, melted
1 small red chilli, chopped
1 garlic clove, crushed
1 Tbsp capers, chopped
1 Tbsp flat leaf parsley, chopped
1 Tbsp chives, chopped
Sea salt and cracked black pepper
Lemon wedges to serve
Combine all ingredients (except olive oil) in a bowl and mix well. Set aside and let the prawn cutlets marinate for 20 minutes.
Thread the prawns onto skewers. Cook on a pre-heated and pre-oiled hot grill for 2 minutes on each side or until cooked through.
Serve with lemon wedges and a light salad.
Tip: Soak the skewers in water before grilling to stop them burning on the grill.
