Ingredients

    1½ cups flour
    100g butter
    6 Tbsp water
    1 Tbsp marmalade
    3 Tbsp Chelsea Golden Syrup
    4 Tbsp coconut

Method

    Preheat oven to 180⁰C.
    Sift the flour into a bowl. Cut in the butter until the mixture resembles fine breadcrumbs. Stir in the water to make a soft dough. Roll out and line the base of a greased 20 x 30cm sponge roll tin. Spread with marmalade, then the Chelsea Golden Syrup. Sprinkle with coconut.
    Bake at 180⁰C for 40 minutes. Serve warm as dessert or cold as a biscuit.
