Dried Fruit and Grated Chocolate Truffles

1/2 cup Chelsea Icing Sugar
1 cup dried apricots, chopped
1/2 cup raisins
1/2 cup currants
1 cup grated chocolate or chocolate chips
1 cup ground almonds
2 Tbsp orange liqueur (i.e. Grand Marnier) or fresh orange juice
1/2 cup Chelsea Demerara Sugar
Place all ingredients, except Chelsea Demerara Sugar, in a food processor and run machine to chop finely into a sticky paste. Roll into balls and roll in the Chelsea Demerara Sugar then chill in the fridge. Keep chilled until serving time.
Great with coffee!
Very sweet, half the icing sugar, or less. We rolled in coconut also. Have added dates and pumpkin seeds and peanuts for different flavours, all work well.
