Ingredients

    1 cup pitted dates, roughly chopped (170g)
    1 cup Chelsea White Sugar (225g)
    1 Tbsp butter
    1 tsp Edmonds Baking Soda
    2 cups Edmonds Standard Grade Flour (300g)
    1 tsp Edmonds Baking Powder

Method

    Preheat oven to 180°C bake. Grease a loaf tin (approximately 22cm x 12cm) and line with baking paper.

    Place dates, Chelsea White Sugar, butter and baking soda in a large bowl. Pour 1 cup of boiling water over the top and leave to cool for 10 minutes.

    Sift in flour and baking powder. Mix until just combined, then transfer to prepared tin.

    Bake for 40-50 minutes, until golden brown and a skewer inserted into the centre comes out clean. Leave to cool in tin for 10 minutes before turning out onto a wire rack.

I made this yesterday and it is lovely - have to make two as it gets eaten so quickly.
Reduced sugar to 3/4 of a cup, and added a teaspoon of cocoa to darken it a bit.
Also add half teaspoon cinnamon and grate a teaspoon of raw ginger in.
I set the clock for 30 minutes and then watch it from there, usually ending up cooking for 40 minutes total.

I used self raising flour (omitted baking powder and soda) and added in an egg and cinnamon. Dates I also chopped finely and baked for less time. It come out amazing!

if it turned out like a brick, you forgot baking powder. Have not tried this recipe yet. But if the dates are large....try chopping them up!!!!

It's a very good recipe, the old people I make this for tell me it tastes like when they were children. Highly recommended and so easy to make!!!!

Really easy, I added crystallised ginger, walnuts and seasame seeds and a few saltanas as a topping, and it was a hit!

Made this today, was just like my mum used to make, loved it, really easy, didn’t change a thing, keep an eye on cooking time, all ovens are different

Loved this recipe.
I soaked as recipe said then processed dates with half the water before adding rest of the wate4 and proceeding with rest of recipe, as the dates were really large. This worked well.
Thankfully I read reviews while cooking about length of cooking time being too long. Tested it after 45mins and it was perfect. Great for breakfast toasted.

Great recipe, very easy. Keeps well. I mix the fruit up a bit for a change and use raisin or sultanas. Also I use raw sugar for a better colour.

The baking time indicated in the recipe was way too much... it became a brick that I could smash a window with.

Great easy loaf. I used 1.5 cups of dates and 3/4 cup sugar, and next time I think I’d just use 1/2 cup sugar as it’s quite sweet. I also added 1/2 tsp cinnamon which gave it a nice extra flavour. Mine was ready after 40 min so I suggest checking it at the 30 min mark.

Yummo. Easy to make. Didn't muck about with ingredients. I have a sweet tooth. Added some dry apricots and bam. With slabs of butter spread on each slice.. Just delish. Thank you

After reading other posts added one egg and some ginger. Also cooked for 40 mins. Think the egg ensured it was light. Would put in more dates next time.

Think I just made a loaf sized scone as part of lockdown baking 2020.

Sounds a bit sweet but first time best to follow the recipe.
So fingers crossed.

Recipe says cook 1 hour. Mine was done to perfection in 30 minutes. Perhaps Chelsea you should check your recipes before you post them.

great recipe. I added an egg and reduced sugar to 1/4 cup as dates add enough sweetness. Turned out good.

Recipe worked really well. Perfect consistency. My 6yo son loves it! I found it tasty but too sweet - would like to experiment with reducing sugar content next time I make it.

Thank you for this delicious easy recipe, I just added an egg, halved the sugar, but added a dessert spoonful of honey; because it's a natural preservative: Thus this cake keeps well for a few days in a sealed tin at room temperature.

Lovely easy recipe. I had to alter it because I didn't have enough dates to make 1 cup. I made up the cup measurement with cranberries and sultanas as well as the dates. The mix of 3 fruits is still lovely.
