Easy Peasy Pudding and Pie

4 eggs
1 cup Chelsea White Sugar
120g butter melted
2 tsp grated lemon rind
3/4 cup coconut
3/4 cup (120g) ground almonds
juice 1 lemon
juice 1 orange
1/2 cup flour
250g sour cream
Chelsea Icing Sugar to serve
Preheat oven to 180°C. Grease a 20cm pie dish. Blend all ingredients in a food processor. Pour into the pie dish and place in oven. Cook for 35 minutes or until golden and set.
Serve sprinkled with Chelsea Icing Sugar. Serve warm with cream and lemon curd (for a fancy occasion) or cold (for a picnic or school lunches). You can replace sour cream with milk or yoghurt, or leave out ground almonds and add more coconut. Add essences, passionfruit pulp, cocoa - whatever you have available.
I loved this and so did the family. Next time I make it though I will use all lemon juice instead of lemon and orange to see if I like that better. The family felt it needed a sauce and so I will do that as well. Yum!
