Ingredients

    250g melted butter
    2 1/2 cups of Chelsea Caster Sugar
    2 large eggs
    2 Tbsp Chelsea Golden Syrup

    Banana cake option:
    2 large ripe bananas, mashed
    4 cups self raising flour
    2 tsp baking soda
    2 1/2 cups luke warm milk


    Chocolate cake option:
    3 Tbsp cocoa
    4 cups self raising flour
    2 tsp baking soda
    2 1/2 cups luke warm milk

Method

    Line with baking paper a very large tin (equivalent to an oven roasting dish 33 x 23cm). Pre-heat oven to 180°C.

    Beat butter and Chelsea Caster Sugar. Mix in eggs and Chelsea Golden Syrup.

    Banana cake only: add bananas and mix well. Dissolve baking soda in milk. Add flour and milk mixture into the butter mixture and mix together until well combined and lump free.

    Chocolate cake only: Sift together flour and cocoa.  Dissolve baking soda in milk. Add dry ingredients and milk into the butter mixture and mix together until well combined and lump free.

    Both: Pour batter into prepared cake tin and bake for 45-50 minutes or until cake comes away from the sides of the paper.

    Wait 10 minutes before turning cake onto rack to cool.
    When cold, ice with chocolate icing, sprinkle with coconut or chocolate sprinkles and serve.

My bananas were VERY ripe so on my second cake I added less milk, only 1 and 3/4 cups, it was still nice and moist. I also only used 2 cups of sugar and it is probably still a bit too sweet for my taste. Chopped up some walnuts for a bit of crunch. Quick and easy way to feed a large crowd for afternoon tea. Will use again

How big is this cake. I have a 10" cake tin, but when I cook the cake it looks great when it comes out of the oven, and while it cool, it loses at 1/3 its height. What am I doing wrong.
CHELSEA: we recommend a 33 x 23cm cake tin. Humidity and moisture are the likely cause. Reduce the liquids slightly.

I think you should review instructions. Banana cake also needs baking soda and milk and chocolate version needs flour.

Mine was a flop, looked great in the oven but dropped down in the Middle to reveal uncooked mixture. Baked it in a 28 cm round tin. Slightly below centre in the oven . Any solutions ?
CHELSEA: Hi there, it sounds like you needed to cook it for a little longer. We recommend testing the cake with a skewer to check if it is cooked in the middle or not.
