Ingredients

    1 cup canned or stewed fruit, chopped up i.e. peaches or pears
    4 Tbsp jam
    50g butter
    1 egg
    ¼ cup Chelsea Caster Sugar
    1 cup self raising flour
    ½ cup low fat milk

Method

    Spray 4 straight sided coffee mugs with non stick baking spray.

    Divide the chopped fruit equally between the mugs. Spoon a tablespoon of jam over the fruit. Place the butter in a medium sized microwave proof bowl. Melt on high power for 30 – 40 seconds. Beat in the egg and Chelsea Caster Sugar then mix in the flour and milk. Spoon the mixture over the fruit and jam. Place all four mugs in the microwave and cook together on high for 3½ - 4 minutes. Rest the puddings for 2-3 minutes in the mugs then tip out onto individual plates. Serve with fruit yoghurt, whipped cream or ice cream.

Excellent and quick - I whipped this up after the main course so didn't have to spend ages before dinner faffing about. I had leftover uncooked puds which I refrigerated and cooked up a few days later - still came out fluffy and moist. Will definitely make again with different fruits.

Might need a teaspoon of baking powder, wasn’t fluffy.
