Ingredients

    85g white chocolate
    30g unsalted butter, chopped into bits
    ½ tsp vanilla essence
    ½ cup flour
    ¼ tsp salt
    3 large eggs
    1/3 cup Chelsea Raw Sugar

Method

    Line cake tin, butter the sides then flour it.
    Double boil (but barely simmering) the chocolate, butter and vanilla with 3 tbsp of water. Stirring until the mixture is smooth.
    Remove from heat and let the mixture cool.
    Sift together the flour and salt. In another bowl, beat the eggs and sugar on high for 5 minutes.
    Fold the flour mixture into the egg mixture until just combined then fold in the chocolate mixture, gently but thoroughly.
    Cook in the middle of a 180°C oven for 25 minutes.
