Ingredients

    250g dark chocolate
    125g soft, unsalted butter
    6 eggs (2 whole, 4 separated)
    175g Chelsea Caster Sugar
    2 Tbsp orange oil/essence
    Whipped cream

Method

    Preheat oven to 180°C. Grease a 20cm spring form cake tin.
    Melt the chocolate – let butter melt in it.
    Beat the 2 whole eggs and 4 yolks with 75g of the caster sugar and orange oil/essence. Gently add the chocolate.
    In another bowl: Beat 4 egg whites until foamy, add the remaining 100g caster sugar.
    Lighten chocolate mixture by mixing in a spoonful of the egg whites, and then fold the rest in.
    Bake for 35-40 minutes.
    Cool in the tin and fill with whipped cream to serve.
