70g Tararua Butter
1 cup Chelsea Icing Sugar
1/2 tsp vanilla essence
2-3 tsp very cold Meadow Fresh Original Milk
Cream the Tararua Butter, vanilla and Chelsea Icing Sugar in a bowl until pale and fluffy.
Gradually, with the beaters running, add the Meadow Fresh Original Milk. The mixture should resemble whipped cream.
Makes enough to fill one 20-23cm cake.
This isn’t really living up to the name. Much more sugar in this recipe than in others for mock cream. This is much more like a buttercream- sweeter than expected, and sweeter than needed for the purpose you would use a mock cream.
Makes really nice mock cream. I put the 3 tablespoons of water in a cup in the deep freeze when I started making the cream so it was nice and cold. I made sure to beat the mixture for about 10 minutes until it was really smooth and I couldn't taste any sugar crystals.
My mother made us all our birthday cakes as jida. Mine was chocolate with mock cream. This is a memory cake for me. Mock cream is so much nicer and has nore body to it than normal whipped cream. Always a winner to me
I can't do to much butter or margarine. Will it still turn out if i half the butter or whats a gud substitute. I groove on the mock cream in the PacnSav n New world donuts and its white not a yellow

Thank you for this great recipe just like mum use to make when she made her beautiful cakes filled with this yummy cream. Much better than real cream last for days.
Mock cream... the name itself suggests that it would be a dairy free alternative... instead it's basically just CREAM!
Looks and feels like real cream, I microwaved the butter for 20 seconds which made it easier to mix. Very quick to make, and a great result.
Came out great! Still needs to be refrigerated though due to the butter content. So best made and used on the same day.
