125g butter, softened
1 tsp vanilla essence
3/4 cup Chelsea Caster Sugar
2 eggs
1 1/2 cups flour
1 1/2 tsp baking powder
1/2 cup milk
Place large paper patty cases in deep mufin tins. Preheat oven to 180 degrees celcius.
Beat together butter,essence and Chelsea Caster Sugar until light and creamy. Add eggs one at a time, beating well after each addition. Sift flour and baking powder into a bowl. Fold flour into butter mixture. Stir in milk.
Spoon mixture into patty cases.
Bake for about 16 minutes or until golden.
Transfer to a wire rack to cool. When cold spread with icing.
