Ingredients

    1/4 cup cocoa
    2 cups plain flour
    4 teaspoons baking powder
    100g butter, melted
    3/4 cup Chelsea White Sugar
    2 eggs
    1/2 teaspoon vanilla essence
    1 cup milk
    1 cup white chocolate chips or chopped white chocolate pieces

Method

    Preheat the oven to 200oC conventional or 180o C fan forced.
    Mix all ingredients together in a large bowl until just combined and moistened.
    Spoon into well-greased 1/3 cup muffin pans and bake for 15-18 minutes. Cool on a wire rack.

This recipe is not good! Mixture is way too thick and I’m a newbie to baking so that says a lot!

I did tweak it to my own liking though. I added an extra cup of milk and extra chocolate chips.

Lovely muffins

Worst muffins. Stuck to tin, too much baking powder, too much butter in general.
