Ingredients

    1 cup oatmeal
    1 cup flour
    1 cup baking bran
    1 cup Chelsea Soft Brown Sugar
    1 tsp baking powder
    1/2 cup chocolate chips
    1/2 cup raisins
    1/2 cup chopped walnuts
    1 egg
    1/2 cup cooking oil

Method

    Mix all the dry ingredients together, sifting flour and baking powder.
    Mix egg and cooking oil together. Add to dry ingredients, mixing well.
    Put into small sponge roll tin that has been sprayed with cooking spray.
    Lightly press into tin.
    Bake at 180°C for 20 mins or until golden.
    Don't over cook and it will remain light to eat, rather than hard and crunchy.
