Method
Place Chelsea Golden Syrup and cream in a heatproof bowl or top half of double saucepan, stir over simmering water until golden syrup has dissolved.
Add egg yolks, Tia Maria and vanilla, stir until mixture thickens slightly, about 6 minutes.
Arrange pears in a shallow serving dish, pour caramel over pears and top with the crushed peanut brittle.
