I give 2 & a half stars. One star for the simplicity of the receipe, other for being light and fluffy & a half star for being easy to make. Down side the chocolate chips sunk to the bottom, the receipe needs adjusting, too much baking powder leaves you with a horrid after taste. Apart from that they're ok.
Preheat oven to 220°C bake. Line a 12-hole muffin tin with paper cases.
In a large bowl, stir flour, Chelsea Caster Sugar, baking powder and salt together.
In a separate bowl, whisk milk, butter, eggs and vanilla until combined. Fold into flour mixture together with the chocolate chips. Don't over mix or muffins will be tough.
Spoon into prepared tin. Bake for 12-15 minutes, until muffins spring back when lightly pressed on top, and a skewer inserted into the centre comes out clean.
Delicious served warm!
