To avoid this I hold the raspberries to one side and divide the final mixture in half, approximately, and fill all the cases with one half the mixture then add the raspberries on this, it is approximately 3 raspberries to each muffin. Then top each muffin case with the remainder of the mixture. This prevents leaching of the raspberry juice into the muffins and they hold nicely in the middle of each muffin.
