Serves
24
125g butter
1 cup Chelsea White Sugar
2 Tbsp Chelsea Golden Syrup
1 cup flour
1 tsp baking powder
1 cup coconut
1 egg
1 cup mixed dried fruit: raisins, currants etc.
1 1/4 cups toasted muesli
Put butter, Chelsea White Sugar and Chelsea Golden Syrup into a large bowl and melt in the microwave. Thoroughly mix in the remaining ingredients.
Grease a flat 20 x 30cm sponge roll baking tin. Press mixture into tin and bake at 180°C for 20 minutes.
Cut into bars while still warm, and when cool, store in an airtight container.
Tip:
To prevent the jagged edges you can get when cutting cooled slices such as muesli slice, use a sharp knife to score the bars, as soon as the tray comes out of the oven. Then cut the cooled bars along the scored lines.
Delicious, quick & easy. You can add whatever is in the pantry, Good for using up left over packets of ingredients.
This was a quick fix late night kitchen dash for lunchboxes. Easy to make, tasted terrific. I doubled the recipe so it went further and froze half.
