Ingredients

    125g dark chocolate
    60g butter
    3/4 cup Chelsea Icing Sugar
    100g ground almonds
    4 Tbsp cream
    150g dark chocolate, extra
    1 tsp kremelta

Method

    Place chocolate and butter in a small microwave safe bowl. Cook on high for 1½ mins.
    Stir in Chelsea Icing Sugar, ground almonds and cream. Beat until smooth. Refrigerate for 30 minutes or until firm.
    Roll heaped teaspoonfuls of the mixture into balls. Place on baking paper on a tray.
    Combine extra chocolate and Kremelta in a microwave safe bowl. Cook on high for 1½ mins. Coat truffles with chocolate. Place on tray to set.

    Tip: Chilled truffles can be refrigerated until required.

    Recipe variations:
    - Substitute dark chocolate for white or milk chocolate.
    - Sprinkle with finely chopped nuts or chocolate sprinkles while the outer chocolate coating is still wet.
