125g butter
1 x 400g can sweetened condensed milk
1 Tbsp sweetened coffee essence
1 packet vanilla wine biscuits, crushed
1/2 cup coconut
1/2 cup raisins
1/2 cup Chelsea Coffee Sugar
1/2 cup chopped walnuts
Coffee Icing
25g butter, melted
1 Tbsp sweetened coffee essence
2 1/2 cups Chelsea Icing Sugar
Preheat oven to 180°C. Line a 30 x 20 cm sponge roll tin with non-stick baking paper.
In a large bowl, melt the butter & condensed milk together, stir until well blended. Add the coffee essence and stir well. Add other ingredients & mix to combine. Press into the prepared tin. Bake for 20 minutes. Cool in the tin and ice with coffee Icing when cold.
Coffee Icing
Mix all ingredients together adding a little boiling water to make a smooth Icing. Spread over cooled slice and cut when set.
This is a standard bakeless cake recipe so not sure why it’s being baked for 20 minutes? I still used the same ingredients but caramelised the condensed milk, coffee crystals (sugar) and butter in the microwave for around 5 minutes (time depends on your brand of milk) then mixed in a tablespoon of Moconna instant coffee dissolved in a little hot water then mixed in all the rest of the ingredients, pressed into a tin, iced, then in the fridge to cool. Much easier but just as tasty.
Delicious. Omitted the coffee sugar but otherwise made as written. In my oven the slice was cooked in 15min instead of 20. Wish there was a measurement guide for the boiling water. I was conservative with what I added, but the icing ended up quite runny by the time I'd added enough for a smooth consistency. Will definitely make this again. Even hub liked it and he hates coffee.
Luv the taste.... but has anyone else experienced the "gritty" texture of the coffee sugar?? I wondered if you could either leave out the sugar or melt it with the butter and condensed milk?? It really put us off it..... which is a real shame as the taste is amazing!
Made this for the first time and it's so easy and delicious! Will be made many more times into the future, yumo!
This recipe reminds me of my childhood. My brother brought the recipe home and it became a special treat. We lost the recipe somehow and my attempts to recreate it over the years have been unsuccessful. Just couldn't get the right proportions of the ingredients. So happy to be reunited with it!
