    pulp of 6 passionfruit
    1 Tbsp fresh lemon juice
    2 eggs
    1 tsp butter
    1 cup Chelsea White Sugar


    Whisk all the ingredients together. Place in a small double boiler and cook over a steady heat, stirring regularly until it thickens (approx 35 minutes).
    Pour into clean sterilised jars, cover and store in the fridge.

It was tasty, but pretty runny. After stirring for the 35 minutes the recipe calls for and then another 15 minutes it still hadn't reached that custardy consistency like lemon curd. We'll still be using it, but as a sauce to pour over ice cream instead of a spread.


The recipe sounds easy and it sounds like the jam is easy to make

Delicious! Will be using this recipe again. The consistency is a little runny but fabulous all the same.
