2 Tablespoons Cornflour
2 Cups Water (hot)
1/2 Cup Chelsea White Sugar
Juice of 2 or 3 Lemons
2 Whites of Eggs
1 : Put the Chelsea White Sugar into hot water and bring to boil, then add the cornflour (dissolved in water first) and stir for 5 minutes. Add the lemon juice before removing from heat.
2 : When cool whisk in the stiffened whites of eggs, and put into dishes to set.
Cool for minimum two hours. Serve.
