Ingredients
  • 4 apples, peeled, cored, quartered, each quarter cut into 3 wedges
  • ⅓ cup water
  • 2 tsp Chelsea LoGiCane™ Low GI Sugar
  • Ground cinnamon, to serve

Vanilla custard

  • 1 ½ tbsps custard powder
  • 2 tbsps Chelsea LogiCane Low GI Sugar
  • 1 ½ cups low fat milk
  • 1 tsp vanilla extract or essence

Method
Put the apple wedges, water and Chelsea LogiCane Low GI Sugar in a medium saucepan. Cover and bring water to a simmer over medium heat. Reduce heat to medium-low and cook, covered, for 8-10 mins or until the apples are just tender. Remove pan from heat and set aside, covered, for 5 mins.
Vanilla custard: Meanwhile, put the custard powder and Chelsea LogiCane Low GI Sugar in a small saucepan. Stir well. Whisk in a little milk to form a smooth paste. Whisk in the remaining milk. Cook over medium heat, stirring often, for 7-8 mins or until the custard thickens and comes to a simmer. Remove pan from heat and stir in the vanilla.
Divide the custard between shallow serving bowls. Top with the apple wedges and sprinkle with a little cinnamon to serve.
