Ingredients

    500g ripe tomatoes
    1 red onion, peeled and chopped
    3 - 5 red chillies (3 = medium, 4 = med/hot, or 5 = hot)
    5 cloves garlic, peeled
    1 Tbsp fresh ginger, peeled and roughly chopped
    2 Tbsp fish sauce (30ml)
    1 1/3 cups Chelsea Caster Sugar (300g)
    1/3 cup white vinegar (80ml)

Method

    Finely chop half the tomatoes and set aside with the onion.

    In a food processor combine the rest of the tomatoes, chillies, garlic, ginger and fish sauce; blend until fairly smooth. Pour the blended mix into a saucepan with the sugar and vinegar. Bring to the boil, stirring regularly with a wooden spoon.

    Add remaining tomatoes and onion; reduce to a simmer for 40-50 minutes. Skim off any foam and stir often.

    When thick and syrupy, remove from the heat and cool slightly before pouring into pre-sterilised glass jars. Store in a cool place and refrigerate once opened.

    Makes approximately 2 x 250ml jars.

A quick and easy recipe. With how expensive fresh tomato’s are at the moment I have been using canned and it’s still delicious. Easy to adjust chilli to suit your tolerance level. I use 2 and our whole family loves it! I often mix with homemade aioli for a yum dip too.

I love this sauce ,use it for many recipes,you can use 2 tins of canned tomatoes
if no fresh ones available

This is a great easy recipe. I had a huge amount of tomatoes and decided to try making chilli jam. Delicious. I doubled the recipe and it worked perfectly.

Lovely straightforward recipe. I upped the chilli amount considerably, because we like it hot and the chillies I grew didn't turn out super spicy. I suppose it's a good idea to just taste and adjust.

Nice taste but mine didn't set well, even after boiling and simmering again.

I didn't have fish sauce so used Lee & Perrins Worcester sauce. This is a very easy, no fail recipe. Works brilliantly. The jam can be used as a lovely dipping sauce too. I use 4 chillies for a med/hot jam. I have made this 3 times so far with chillies from the garden and glut of tomatoes. You could also use tinned tomatoes in winter if need be. Thanks

Just made this with chillies and tomatos from the garden. Had no fish sauce so used Lee and Perrins Worcester sauce. So tasty - I used 4 chillies and it packs a kick. So yum with tasty cheddar and burgers. Will definitely make more now. Very nice.

This recipe was awesome!!! very easy to make, calls for unusal ingredients but makes it beautiful! quite hot, some people may want to reduce the chillies added :)

This is a great recipe, whenever I make it there is a queue of friends who want a jar. Really great with homemade bread and brie.

This is an awesome recipe, if you use maximum chillies it has a great kick! I grew 2 chilli plants just so I could make loads of this as friends always want a jar.
